Melissa is excited to announce that she has officially typed the last word in her first cookbook!  Her goal is to have it published and ready for purchase by mid-August, so sit tight.  If you love cookbooks you will LOVE this one.  It’s a little different from your average cookbook.   Stay Tuned!

Recipes for a Trio of Salads | Spring Market | Dream Home Cooking

We were so thrilled that Melissa was invited to do a cooking demo at the Junior League of Huntsville’s 4th annual Spring Market this year. Since some fans of the show couldn’t make it to the Spring Market today, Melissa wanted to make sure and share the recipes from her cooking demo on here too! She prepared a “Trio of Salads,” including Cornbread Salad, Chicken Salad and Italian Pasta Salad. Chicken Salad

  • 4 chicken breasts, cooked and chopped
  • 1 (3-ounce) package cream cheese, softened
  • 1 cup mayo
  • 1 (8-ounce) carton sour cream
  • 1 tablespoon yellow mustard
  • 2 teaspoons sugar
  • 1 teaspoon each of salt, pepper, garlic powder, onion powder
  • 1 tablespoon Worcestershire sauce
  • ½ cup green or red grapes, sliced
  • ½ cup chopped pecans

Mix cream cheese, mayo and sour cream together until blended well.  Add remaining ingredients, adding the chicken last.  Stir well and refrigerate at least 2 or 3 hours.  You may add additional seasonings to taste.

Cornbread Salad

  • 1 box Jiffy cornbread, cooked according to directions and cooled
  • 8 slices bacon cooked crisp and crumble
  • 1 small onion, chopped
  • 2 boiled eggs, chopped
  • 1 green and 1 red bell pepper, chopped
  • ½ cup green onions, chopped
  • 1 cup frozen green peas, thawed
  • 1 cup frozen corn, thawed
  • ¾ cup mayo
  • 2 teaspoons sugar

In a large bowl or trifle dish, gently mix all ingredients together, adding the cornbread last.  Stir well and refrigerate at least 6 to 8 hours before serving.

Italian Pasta Salad

  • 1 (16-ounce) box tri-colored rotini pasta, cooked and drained
  • ½ bottle of Kraft Tuscan House Italian Dressing
  • 1 cup fresh mozzarella, cubed
  • 1 cup salami, rough chopped
  • Shredded parmesan cheese

Mix together and refrigerate at least 1 hour before serving.

Punch Bowl Dessert

  • 1 large Sara Lee pound cake (you can find this in the freezer section)
  • 1 large container cool whip
  • 2 large boxes vanilla instant pudding
  • 6 cups whole milk
  • 1 cup strawberries, washed and sliced
  • 1 cup blackberries, washed
  • 1 cup blueberries, washed
  • 1 can cherry pie filling

Cut pound cake into cubes and set aside.  Make pudding according to directions on the box.  Now place a layer of pound cake cubes on the bottom of large glass bowl or a punch bowl.  Pour half of the pudding over that; Add half of all the fruits, half a can of pie filling and then spread a layer of cool whip over that.  Repeat the same thing one more time and finish with cool whip.

Chicken Pot Pie Soup

  • 1 onion, chopped
  • 2 tablespoons butter
  • 3 cups cooked chicken, chopped
  • 1 package frozen peas and carrots
  • 1 baking potato, cooked, peeled and cubed (optional)
  • 2 cans cream of potato soup
  • 2 cans cream of chicken soup
  • 1 cup water
  • 3 cups whole milk
  • 1 Tablespoon each: garlic powder, onion, powder, salt and pepper
  • (you may add more seasonings to taste)
  • 1 package of Pepperidge Farms frozen Puff Pastries

In a heavy-duty pot, melt butter and add onion; sauté’ about 5 minutes. Add chicken, veggies, soups, water, milk and seasonings. Bring to a soft boil, stirring frequently, (you don’t want the milk to scald) and then reduce heat immediately to low, cover and cook on low for 30 minutes. This can simmer on low several hours. Bake puff pastries according to directions on the box. Place 2 puffed pastries in a bowl and ladle soup over pastries. Delicious!

New Episode Premieres Saturday

This Saturday, a new episode of “Dream Home Cooking,” will air on WHNT Channel 19 at 11:30 a.m. This episode  was just filmed  in one of Woodland Homes’ newest communities, Spencer Green. Melissa will be preparing Italian Sausage Soup with Tortellini, Layered Salad and Garlic Cheese Bread. Don’t miss these wonderful recipes! New Episode in Woodland Homes’ 2008 Dream Home

The newest episode of “Dream Home Cooking” filmed in the 2008 Dream Home is now airing. In this episode, Melissa will be preparing Chicken and Rice, Poppy Seed Chicken Casserole and Crunchy Peas. She will be cooking in the 2008 Rocket City Dream Home. Episode air times are available here.

The Dream Home is located in the Foxfield community in Madison, Ala., off of Balch Road. Directions, details about the home and sponsors of this year’s Dream Home are all available on the Woodland Homes web site. This year’s Dream Home is also the Foxfield concept home, so you still have the opportunity to see this amazing Woodland Homes kitchen up close.

Melissa’s Caesar Salad from the Whitworth Farms Episode

Melissa Friday prepared a simple Caesar Salad in the Whitworth Farms episode of “Dream Home Cooking.”

  • Fresh Romaine Lettuce
  • Roasted Almonds
  • Large-Cut Croutons
  • Ceasar Dressing of your choice
  • Freshly grated Romano Cheese

Prepare Romaine Lettuce. Rinse and dry thoroughly. Add croutons, almonds, cheese and dressing. Toss and enjoy!
