Chicken Pot Pie Soup

  • 1 onion, chopped
  • 2 tablespoons butter
  • 3 cups cooked chicken, chopped
  • 1 package frozen peas and carrots
  • 1 baking potato, cooked, peeled and cubed (optional)
  • 2 cans cream of potato soup
  • 2 cans cream of chicken soup
  • 1 cup water
  • 3 cups whole milk
  • 1 Tablespoon each: garlic powder, onion, powder, salt and pepper
  • (you may add more seasonings to taste)
  • 1 package of Pepperidge Farms frozen Puff Pastries

In a heavy-duty pot, melt butter and add onion; sauté’ about 5 minutes. Add chicken, veggies, soups, water, milk and seasonings. Bring to a soft boil, stirring frequently, (you don’t want the milk to scald) and then reduce heat immediately to low, cover and cook on low for 30 minutes. This can simmer on low several hours. Bake puff pastries according to directions on the box. Place 2 puffed pastries in a bowl and ladle soup over pastries. Delicious!
